This recipe is so simple and so good!  A great variation with less ingredients to my other white bean and kale soups.

Steps:

Cook 2c of dry beans in Instant Pot, then cook the base of the soup in the meantime

Sauté 1/2 chopped yellow onion for a couple minutes (in water, not oil)
Add 2 crushed cloves of garlic for another minute or so
Finally, add:
– 2 chopped Roma tomatoes,
– 3-4c torn kale
– fresh Tb chopped rosemary
– 2 Tb chopped fresh parsley
– salt and pepper to taste
– few shakes of red pepper flakes
– Any other herbs you may want to add here
Sauté until kale is wilted
Add cooked beans and water to desired consistency (we had a bean side dish yesterday and then made it soup today by adding more water).

Let sit and cook on low for a bit so flavors meld. Amazing flavor, so good!
